Elizabeth Zamajski is a Registered Dietitian with almost 20 years of experience. Elizabeth went to Ryerson Polytechnic University, where she graduated in 2000 with a Bachelor in Applied Science in Food and Nutrition. Elizabeth completed her Dietetic Internship at the University Health Network in Toronto. Elizabeth works at Halton Healthcare in Oakville, Ontario.

She provides nutritional care to patients across all areas of the renal journey, including Independent Dialysis, which includes home hemodialysis and peritoneal dialysis as well as MCKC and in center dialysis. Elizabeth has been the Co-Chair of the Canadian Association of Nephrology Dietitians for over five years.

Elizabeth has been involved in many projects that support renal dietitians and renal patient population. Quality of patient care and advocating for exemplary patient care is Elizabeth’s main focus in her practice.

Christine Nash is a Registered Dietitian at the University Health Network’s Toronto GeneralHospital and has been working with patients with chronic kidney disease (Stages 3-5, including dialysis) for over 15 years. She is co-chair for the Canadian Association of Nephrology Dietitians(CAND) and is the provincial renal dietitian lead for the Ontario Renal Network.

She recently completed her Masters in Nutritional Sciences at the University of Toronto, where she studied nutritional status and dialysis modality and their effect on folate status in the era of folic acid fortification.

Danielle Martin is a Registered Dietitian for the nephrology program at Waterloo Region Health Network (WRHN). She works mainly with patients on in-centre hemodialysis. She started her career in a Diabetes Education Program and is also a Certified Diabetes Educator.

Danielle is a graduate of the Applied Human Nutrition program (BASc) at the University of Guelph and the dietetic internship program at Grand River Hospital. 

She is passionate about helping patients navigate the sometimes complex world of kidney nutrition and also enjoys contributing to Spice it Up! cookbooks for kidney patients.

Dani Renouf is a Registered Dietitian with over 15 years of experience working with patients and clients with kidney disease, irritable bowel syndrome, diabetes, high blood pressure, and high cholesterol. She holds a chair position as Lead Dietitian for BC Renal and participates in research projects, media opportunities, and educational conferences.

Dani has lived in Iran, Germany, the United States and Canada, so has been exposed to a variety of cultures and dietary ways of eating. She speaks German, Farsi, and some French and Spanish.

Dani works full time in the Kidney Care Clinic at St. Paul's Hospital in Vancouver and runs her private practice, Four Elements Nutrition Consulting. Living and working on unceded territories of the Squamish, Salish, and T’Sleil-Waututh, she enjoys learning about the importance of the land and human connection, as well as the value of Indigenous traditional foods on people’s health.

Shonagh Colebrook-Fonseca is a Provincial Practice Lead for Nephrology Dietitians with Alberta Health Services. She also works as a hemodialysis dietitian at the Royal Alexandra Hospital in Edmonton, Alberta.

Over the past 15 years, Shonagh has had the opportunity to provide coverage in the areas of hemodialysis, peritoneal dialysis and kidney transplant.

She has a passion for making nutrition recommendations practical for patients and journeying with patients throughout their continuum of care.

Roxanne Papineau

Roxanne Papineau is a Registered Dietitian specializing in nephrology with 20 years of clinical experience. She currently works as a clinical dietitian in nephrology at the Institut universitaire de cardiologie et de pneumologie de Québec (IUCPQ), where she supports patients with kidney disease and contributes to advancing nutrition care in renal health.

In addition to her clinical work, Roxanne serves as a clinical teaching lecturer for undergraduate nutrition students, pharmacy doctoral students, and nephrology residents at Université Laval. She has been President of the Regroupement des nutritionnistes en néphrologie du Québec since 2018.

Roxanne is also a member of the expert committee in renal health advising the Quebec Ministry of Health and contributed to the development of the 2025 provincial orientations in kidney disease care. She sits on the scientific committee of the multidisciplinary nephrology group DEVENIR and has delivered more than 200 conferences and webinars for healthcare professionals.

She is the author of the best-selling book Savoir quoi manger – Santé rénale and has developed numerous clinical tools and educational resources for dietitians and patients. Her contributions to renal nutrition and patient care have been recognized with several distinctions, including the 2025 Annual Merit Award from the Order of Dietitians-Nutritionists of Quebec and the 2024 Excellence Award – Health Professional, presented by the Quebec Society of Nephrology. She is also a volunteer for the Kidney Foundation of Canada and the PKD Foundation of Canada.

Eileen Carolan is a Registered Dietitian with over 40 years of experience. Eileen attended the University of Alberta, where she graduated in 1978 with a Bachelor of Science degree in Home Economics.

Eileen completed her integrated Dietetic Internship at the Royal Inland and Royal Jubilee Hospitals in Kamloops and Victoria BC respectively. Though she retired in 2022 from Island Health (Vancouver Island, B.C.) she continues to work on a casual basis in hemodialysis in Nanaimo and area dialysis clinics.


Eileen has been an active member of CAND since 1998. Together with 3 other CAND members Eileen coordinated the development of the CAND cookbook, Kidney Friendly Cooking. Eileen was on the editorial team for the 3rd edition (2010) of The Essential Guide for Renal Dietitians and led the revisions to the 4th (2020) and 5th (2025/2026) editions. Eileen continues to promote and distribute both Kidney Friendly Cooking and The Essential Guide and will support the next person to coordinate and edit future updates. For the past two years the CAND Provincial Representatives, with Eileen’s leadership, have had productive tri-annual meetings. The Provincial Representatives now operate on their own with a seat on the CAND board of directors.
